One of our dear reader, Rob Knatz, was in his kitchen when the idea for a Thai sweet chili and pineapple combo hit him. It sounded too good not to try—so he went for it.
Ingredients
- 1 oz Lime Juice
- 1 oz Pineapple Juice
- 1/4 oz Thai Sweet Chili Sauce
- 1 1/4 oz Blanco Tequila
- 3/4 oz Mezcal
- 3/4 oz Dry Curacao
- Egg White
Thai Sweet Chili Sauce
- 1/2 cup Water
- 1/2 cup Rice Vinegar
- 1/2 cup Sugar
- 1 tbsp Sambal Oelek
Garnish (Optional)
Instructions
- Add all ingredients in a mixing tin.
- Shake.
- Double strain over ice and chilled glass.
- Garnish (Optional)
- Enjoy!
Thai Sweet Chili Sauce
- Heat all ingredients until sugar is dissolved.
- Optional: Add small amount of cornstarch/water
