So what exactly is the Wray and Ting? This simple and refreshing highball combines two titans of Jamaican drinking, J. Wray & Nephew overproof rum and Ting grapefruit soda. Think of the Wray and Ting as Jamaica’s version of Mexico’s beloved Paloma cocktail — it’s a straightforward drink that’s as delicious as it is easy to make. Both Wray & Nephew and Ting are beloved in their home country, but when combined, they create a drink that is arguably greater than the sum of its parts. It sounds simple, but there’s an almost supernatural alchemy between these ingredients.
Jamaican pot still rums are known for their funky flavors and pungent aromas known on the island as “hogo”. The most well-known brand of this style of rum is J. Wray & Nephew, but other unaged, pot-still Jamaican rums provide a similar experience. When mixing, this high-octane style of rum can easily overpower a drink. Here’s how you make a Wray and Ting:
2 oz. (60ml) of J. Wray & Nephew rum
4 oz. (120ml) of Ting grapefruit soda
½ oz. (15ml) of lime juice (optional)
Fill a highball glass with ice. Pour the rum and Ting over the ice and gently stir to combine. If Ting can’t be acquired, the drink can be made with another grapefruit-flavored soda, but the full-strength, Jamaican pot still rum can’t be replaced in this recipe.
