Instructions
Add pineapple and mint in mixing tin.
Muddle.
Add remaining ingredients.
Add pebble ice.
Flash blend until sufficiently chilled.
Double strain in a chilled coupe.
Garnish.
Enjoy!
Smuggler's Cove Demerara Syrup
Add Demerara sugar to a pin with water over low heat
Stir until fully incorporated.
Take off heat then add the granulated sugar.
Stir until fully dissolved.
Lasts 6 months in the fridge.
