I recently purchased my first bottle of Rhum Barbancourt 5 Star 8 Year Old, and it immediately became one of my favorite rums. When I first tasted it I noticed a honey-like smokiness with a hint of chocolate, and I wanted to create a drink that would highlight these flavors. I started with the sour template and went from there. To highlight the smokiness I wanted to split the spirit base with a strong mezcal. For the sweetener the obvious choice was a honey syrup, and for the chocolate I chose to use the Fee Brothers Aztec Chocolate bitters. The chocolate flavor disappeared with only 2 dashes so I upped it to 4 dashes which gives just the right amount of flavor.
Ingredients
- 1½ oz. Rhum Barbancourt 5 Star
- ½ oz of a strong smoky mezcal I prefer Gracias A Dios Espadin Mezcal
- ¾ oz lime juice
- ¾ oz honey syrup 2:1
- 4 dashes Aztec Chocolate Bitters
- 1 egg white
Instructions
- Add all the ingredients to the shaker tin.
- Dry shake for 10 seconds.
- Add ice.
- Shake for 10-12 seconds.
- Double strain into a chilled coupe glass.
- No garnish.
