Today’s Cocktail comes to us from The Monkeypod Kitchen in Maui Hawaii. It’s a really inventive and delicious reconstruction of a Mai Tai and given my absolute love for that drink, I felt we had to do it. So yes, this week’s drink is not only another Mai Tai but also features some more advanced technique
Ingredients
- 1 oz Dark Rum
- 1 oz Light Rum
- .75 oz Lime Juice
- .5 oz Macadamia Nut Orgeat
Macadamia Nut Orgeat
- 300 g Warm Water
- 250 g Caster Sugar
- 150 g Roasted Macadamia Nuts
- 2 dashes Orange Flower Water
- pinch Kosher Salt
Passion Fruit Foam
- 1.5 oz Cold Water
- 1 oz Passion Fruit Puree
- 1 oz Simple Syrup
- .5 oz Honey Syrup
- 1 Egg White
Instructions
- Add ingredients to a blender and add ice
- Blend until smooth and thick
- Pour into glass and top with Passion Fruit Foam
To make Passionfruit foam
- Add ingredients to isi whipper and charge with CO2 cartridge(s)
- Let Sit in refridigrator to chill

Very good recipe, we love the Monkeypod. One question. My foam immediately stars the melt and deconstruct. Is there a way to have the foam keep its shape longer?
