Today’s Cocktail comes to us from The Monkeypod Kitchen in Maui Hawaii. It’s a really inventive and delicious reconstruction of a Mai Tai and given my absolute love for that drink, I felt we had to do it. So yes, this week’s drink is not only another Mai Tai but also features some more advanced technique

Monkey Pod Mai Tai

Ingredients
 

Macadamia Nut Orgeat

Passion Fruit Foam

Instructions
 

  • Add ingredients to a blender and add ice
  • Blend until smooth and thick
  • Pour into glass and top with Passion Fruit Foam

To make Passionfruit foam

  • Add ingredients to isi whipper and charge with CO2 cartridge(s)
  • Let Sit in refridigrator to chill

  1. Very good recipe, we love the Monkeypod. One question. My foam immediately stars the melt and deconstruct. Is there a way to have the foam keep its shape longer?
