Sadly the Pegu Club closed during the Pandemic after 15 years in business. Make sure to pour one out for the Homies when you drink this one.
Little Italy2oz (60ml) Rittenhouse Rye3/4oz (22ml) Sweet Vermouth1/2oz (15ml) CynarGarnish with a CherryAdd all ingredients to a mixing glass and stir until sufficiently chilled (approx 40 seconds)Then strain into a coupe or cocktail glass and Garnish with a CherryCreated by Audrey Saunders around 2003, this was created for the opening menu at Pegu Club in New York City. Make sure to pour one out for the Homies when you drink this one.Rittenhouse is a high corn rye, a bourbon drinkers rye so keep that in mind when subbing it for something else. If for instance you use old forester which has a higher rye content in its mashbill you’re going to change the way the drink tastes. Maybe for better maybe not. I’ll Leave that for you to decide.
Stir until sufficiently chilled (approx 40 seconds).
Then strain into a coupe or cocktail glass.
Garnish with a Cherry.
