Fontoura

A cocktail recipe from one of our viewers from Brazil, Phillip Gruneich.

Hello, folks.
I’m a viewer from Brazil and I’ve been playing around with cocktails for the past 2 years. I subscribe to the show mostly for new recipes. The show introduced me to the Army & Navy, for example, and many others.
My first cocktail recipe is called Fontoura, means “Fountain of Gold” in Latin and it uses a blend of cachaças and Amaro Montenegro. I settled on the name because when I tested the cocktail with my friends and they tasted the Amaro Montenegro, they pointed out it tasted a lot like “Biotônico Fontoura”, which was a very traditional medicine in Brazil in the 90s. The fact that the cocktail turns out golden was a bonus.
The core flavors are the cachaças and the Amaro, they work wonderfully together and the grapefruit juice binds them both together. The lime juice and simple syrup create a backbone, adjusting the texture and acidity of the cocktail so everything works even better together.
I ended up with a blend of cachaças because they can be overwhelming. A silver cachaça introduces a sweet taste of cane (which is how this recipe has very little sugar, cachaça is very sweet compared to rum) and the amburana-aged dominates the palate with a mellower, “cherrier”, better rounded cane flavor.
Surprisingly this recipe started when I tried to create a “cachaça sidecar”, and, undecided on the sweeteners, I started testing the core with amaros and explored from there.

  • Add ingredients to Tin
  • Add shaking ice and shake for 8-10 seconds
  • Add Large Cube of Ice
  • Fine strain into Glass
  • Garnish.
  • Enjoy!
