To understand where you’re going you’ve got to understand where you’re from. Tiki and tropical drinks are not a tradition I’ve been typically familiar with within my career and for three or four years I have fallen desperately in love with rum. Coming From the Whiskey and Gin world and a tradition of classic cocktails. I’ve found myself more and more drawn to the kitchen and the fun of tropical and tiki drinks. And so, in an effort to understand them better I’ve decided to make it a mission and shake up all the classics.
Ingredients
- 2 oz Jamaica Rum Dark
- 1/2 oz Barbados Rum
- 1 oz Puerto Rican Rum
- 2 oz Ginger Beer
- 1/2 oz Falernum
- 1 oz Lime Juice
- 2 oz Pineapple Juice
- 2 dashes Angostura Bitters
- 1/8 tsp Pernod
Garnish
- Pineapple Chunk
- Mint Sprig
Instructions
- Whip shake with crushed/pebble ice.
- Ungated Pour into a Pilsner glass.
- Add crushed ice.
- Garnish with a pineapple chunk and mint sprig.
- Enjoy
