A combination South Side and Agricole Mojito. This may exist somewhere, but a quick search didn’t turn anything up, and the only cocktails called ‘beachside’ were concoctions of flavored rum(s) and flavored juices/syrups. A nice botanical gin and grassy Agricole highlight and compliment the mint, while the lime and simple balance it out and keep it from degenerating to hydroponics runoff.
Ingredients
- 1 oz Rhum Agricole I used JM
- 1 oz Gin Plymouth, but would like to try Botanist or Guild
- ½ oz Simple Syrup
- 10 Mint Leaves
- 1 Lime Quartered
- 1 Sprig Mint Garnish
- Top Up Soda
Instructions
- Muddle mint leaves, lime and simple in a shaker.
- Add the spirits and ice.
- Shake well.
- Double strain into a chilled highball glass with an ice spear and straw.
- Garnish with a mint sprig.
