The Aku Aku cocktail is made by Trader Vic. The story is he went to Don the Beachcomber and one of his favorite drinks is the Missionary’s Downfall. So he decided to make a drink as a riff.
Ingredients
- 5 pcs Pineapple 1″
- 8 pcs Mint Leaves
- 1 oz Lime Juice
- 1/2 oz Smuggler's Cove Demerara Syrup Scant
- 1/2 oz Peach Liqueur
- 1 1/2 oz Aged Light Rum
Garnish
Smuggler’s Cove Demerara Syrup
- 2 Cups Water
- 1 cup Demerara Sugar
- 2 cups Granulated Sugar
Instructions
- Add pineapple and mint in mixing tin.
- Muddle.
- Add remaining ingredients.
- Add pebble ice.
- Flash blend until sufficiently chilled.
- Double strain in a chilled coupe.
- Garnish.
- Enjoy!
Smuggler’s Cove Demerara Syrup
- Add Demerara sugar to a pin with water over low heat
- Stir until fully incorporated.
- Take off heat then add the granulated sugar.
- Stir until fully dissolved.
- Lasts 6 months in the fridge.
